Drinks will again flow when the ground floor of Perth’s iconic Palace Hotel site is reborn as The Meat & Wine Co. restaurant.
The historic hotel, on the site of the first licensed premises in the Swan River colony, was built in 1896 by US prospector John de Baun and opened the following year.

Mr De Baun also established The Melbourne Hotel, which reopened this year after a $40 million redevelopment.
The National Trust-registered Palace Hotel was considered one of Australia’s most opulent hotels and was a favourite among journalists until its closure in 1986.

Although the facade was preserved, much of the interior was gutted when Alan Bond redeveloped it as a bank and multi-storey office tower.
Patrons will enter the new restaurant from the corner of William St and St Georges Terrace using the original marble stairs.
“We have been working for years on securing what we believe to be the most iconic restaurant site in the Perth CBD,” Laurence Thorpe, Seagrass BHG State operations and development manager WA, said.

“The grand heritage room retains all the history within its walls, and makes for a unique dining experience.”
The baroque-inspired room adorned with original gold leaf will feature a whisky bar; city workers will be able to drop in for a drink at this or the front bar.

For architect Callie Van Der Merwe of Design Partnership, the challenge was to marry the heritage-listed Federation Free Classical building’s interior with the restaurant’s contemporary, African-inspired aesthetic.
Around $2 million has been spent on the interior fit-out.
The Meat & Wine Co. origin-ated in South Africa as The Meat Co. and is part of the same hospitality group that operates Ribs & Burgers and Hunter & Barrel.
